This stuff is a hit for New Years Eve. I made a big batch today and stuck it in the freezer to thaw the day before.
 
Anybody else planning on making it for their party?

I made your modified recipe (page 3) last weekend and it was EXCELLENT! Thank you so much for posting it and sharing with everyone. We need more people like you who reveal their prized recipes and not hide them away as being a family secret.
I was thinking of starting a hot dog stand or maybe a cart - now with this recipe I am very seriously thinking about it :)
Definitely going to make this again soon for a party I am having and will get feedback on it and will let you know the result.

I made this last weekend for a bunch of friends before everybody gets busy with the holidays.
Again, it was a hit! An all beef hot dog is the only way to go with this and makes the whole experience complete.
I had 3 people ask for the recipe, which of course I shared.
They will also be going to this site to see what else they have been missing out on all their lives ;)
I am surprised nobody has had any comments since the last time I was here. Maybe they want to keep this as their secret? LOL

OK - Superbowl Sunday and I'm getting ready to make my 3rd annual batch of Hot Texas Wieners.  I've made the ocalaFL posted recipe twice and they were excellent both times.  Thanks ocalaFL!  Today I'm going to add the suggested tweaks to the spices (no nutmeg or ginger).  I have to say - my last batches were just like I remember growing up in NJ (Passaic County) - and visiting my grandparents in Paterson.  I loved Falls View as a kid and I have fond memories of viewing the falls and eating hot dogs with my father and grandfather...
 
Miss the NJ food = potato pancakes from Grandma, Taylor ham sandwiches for breakfast, Otto's (Bloomingdale) potato salad, Gionelli's Deli (Wayne), Little Teddies Deli (New Brunswick)

Hi,
So, which of these recipes most closely resembles Johnny & Hanges, Clixes, Goffle Grill?  I lived in Hawthorne NJ for 25 years, and miss going to these places every week.  I'd like to try the one that most people think tastes authentic.  I have had J & H in the last year, and the flavor does have cinnamon.  I amsure both are good, but I would like to hear opinions if possible.  I will post back after trying.

Ok, tried the original recipe of this thread, with edits on page 3.  This is chili.  Looks like chili, smells like chili, tastes like chili.  It is definitely not Clixes or Johnny & Hanges style texas wiener sauce.  When you take J & H to go, your vehicle has the smell of the sauce for days, it is distinct, and immediately makes your mouth water.  When I made this last night, and went outside to get a beer, coming in, the house smelled like chili.  Putting it on Sabretts, tasted like chili.  An authentic Clixes style sauce should not have tomato paste (or less than the 12 oz per 2 lb meat).  It made it too sweet.  And maybe less cumin and chili powder.  We spent a lot of time at Clixes, I would go there on my bike, we had baseball dinners from there.  We used to fish in the same lake in Quebec as one of the sons (I believe the one who passed, RIP), and my dad had an open invitation to go with him fishing there.  Wish I could find that great recipe, works on dogs, burgers, fries, etc.

Tried the second recipe attached to this thread.  That was closer, but still not there.  Too much chili sauce, gave it too much of a rich tomato flavor.  Will try it again, cutting the chili sauce in half, and adding something to replace it.

Thursday, I stopped by Dallas Hot Wieners in Kngston and bought a pint of sauce to take home. I tried it on some Boars Head all beef  hot dogs - it didn't work at all. That's a good dog and that's a good sauce, but they do nothing for each other - you got to have the right kind of dog...

BTW: We had our first local corn of the year a few days ago. It came from Davenport's Farm in the Rondout Valley - excellent!!! The stuff we've been getting from Jersey has been tough old and tasteless...

Try the sauce on Hebrew National's all beef. That's what I use to makeTdj_ Tx's recipe and it works great.

Man I miss the sweet corn up there. We used to buy huge sacks of it from a road side stand in Hurley NY. There are so many things I miss, two being the sweet corn and Dallas Hot Weiners.

Try the sauce on Hebrew National's all beef. That's what I use to makeTdj_ Tx's recipe and it works great.


I agree, Hebrew National does go well with this sauce.

Almost TEN THOUSAND views and only a few feedback blurbs of the recipe?
 
I would love to hear the good, the bad, and the ugly. Was your result over the top or a total flop? I am just trying to gauge the general reaction.... after all, it's not my recipe anyway.

Well, this recipe isn't from Libby's Lunch or the Hot Grill. There are no tomato products in the original "all the way" sauce.

tdj-tex posted a very good replica of the north jersey/hudson valley sauce here on roadfood about two years ago. Using his recipe and a bit extra nutmeg gets you very close to the typical north jersey sauce.

Can I get something clarified here?
 
A. Is this the sauce [ i.e. with ground beef] that is being described as inedible & inauthentic with respect to  North Jersey ALL THE WAY SAUCE?
 
B. This ground beef sauce works well on Hebrew National but not Boar's Head all-beef franks?
"North Jersey Texas Wiener Sauce"
   from Cook's Country magazine
 
1 tbsp vegetable oil
1 lb 85% lean ground beef
1 onion, chopped fine
3 tbsp tomato paste
1 tbsp chili powder
1 tsp brown sugar
1/4 tsp ground allspice
2 c chili sauce
1 c water
1/4 c hot sauce (Frank's Redhot is recommended)
2 tbsp worcestershire sauce
2 tbsp yellow mustard
 
1. Heat oil in large skillet over medium-high heat until shimmering.
Add beef and onion and cook until beef is no longer pink, about 5 minutes.
Stir in tomato paste, chili powder, brown sugar, and allspice and cook until
paste begins to darken, about 2 minutes. Add chili sauce and water and bring to boil.
Reduce heat to medium-low and simmer until mixture is thickened, about 7 minutes.
 
2. Transfer half of mixture to a food processor and process until
coarsely ground; return to skillet. Stir in hot sauce, worcestershire, and mustard.
Serve. (Sauce can be refrigerated in airtight container for 3 days.) Makes about 3 cups.

C. There is ANOTHER recipe, also published by Tdj_Tx a while back for NJ ALL THE WAY SAUCE which uses NO ground beef but ONLY ground up beef/pork dogs. His recipe + more tomato & nutmeg approximates a golden ideal.
By inference, this sauce should ONLY be used on beef/pork dogs.
 
Please reprise that sauce recipe here to clear up this confusion.

Not sure what you mean by "Please reprise that sauce recipe". I'll let tdj_tx speak for himself but all I know is his sauce is darn good and IMHO, not limited as to what you can put it on dogwise or otherwise. It goes well with everything! I even put it on hamburgers and spaghetti!" />" /> (Haven't tried it on Cheerios yet)
